Anu Ramaswami

Anu Ramaswami, Ph.D., the Sanjay Swani ’87 Professor of India Studies, and professor of civil and environmental engineering and the Princeton Environmental Institute, leads several projects managed by PEI that study the connections between cities and surrounding communities and the environment. Her research group works closely with city planners and policymakers worldwide to optimize the sustainability of urban infrastructure, including food, water, energy, shelter, mobility, waste management and open spaces that provide health and well-being. Ramaswami’s work is primarily carried out through the Sustainable Healthy Cities Network, an NSF-funded collaboration she leads between universities, cities, governments, non-governmental organizations and industry partners to develop the science and practical k Sustainable Healthy Cities Network, and serves on the United Nations Environment’s International Resource Panel, the US NSF’s Advisory Committee for Environmental Research and Education.

Sara Elnakib, RD, MPH, CHES

Sara Elnakib has worked in the area of community nutrition for over 10 years. She joined the Rutgers Cooperative Extension in the Department of Family and Community Health Sciences as an Assistant Professor in January 2015. She has focused on food insecurity and improving food access in Passaic County as part of her role in the Passaic County Food Policy Council. She is also interested in food waste in institutional settings and how behavioral economics can be leveraged to reduce food waste. Prior to the faculty appointment at Rutgers University, she served as the Health and Nutrition Director for a Head Start Program in Montclair, New Jersey as well as an Adjunct Professor at Montclair State Univ. Elnakib is currently a doctoral candidate in the Rutgers Univ., School of Public Health. She earned her Bachelors of Science from Rutgers Univ. in Nutritional Science and a Masters of Public Health in Health Educ. and Behavioral Science from the Univ of Medicine and Dentistry of New Jersey.

Karina Pearse LaMalfa MS

LaMalfa is a National Board Certified Health and Wellness Coach, and a member of the American College of Lifestyle Medicine. She is a co-founder of Princeton Eats Plants, a local group that builds community for many interested in the relationships among food, the environment and health. In 2010, she trained as a Wellness Specialist at Whole Foods Market, where she worked to establish programs for individuals, schools and organizations. In 2012, she developed a K-12 curriculum for a local independent school that included hands-on experience, cooking, tasting and garden skills. LaMalfa has worked for a decade with individuals and groups to create wellness plans that optimize key health indicators, support mental and physical well-being, and empower sustainable change. She holds an M.S. in Applied Psychology and professional certifications from the T. Colin Campbell Center for Nutrition Studies, Dr. Neal Barnard’s Food-for-Life Program, and the Rouxbe Plant-Based Culinary School.
